Chicken with Louisiana Sisters Spiced Olives

  • 1 chicken cut into piece
  • 3 tbsp. olive oil
  • 6 toes of garlic, chopped
  • 3 yellow onions, chopped
  • 4 ripe tomatoes, chopped
  • 16 oz jar of Louisiana Sisters New Orleans Spiced Pitted Olives, drained
  • 1 tbsp. oregano
  • 1 cup dry red wine
  • Salt and pepper to taste

Brown chicken in olive oil.  Remove chicken and drain off most of the oil.  Saute’ onions until transparent then add garlic and saute’ for 2 minutes more.  Add tomatoes and olives, saute’ until tomatoes are soft.  Add the oregano, wine and chicken, simmer
