- 1 chicken cut into piece
- 3 tbsp. olive oil
- 6 toes of garlic, chopped
- 3 yellow onions, chopped
- 4 ripe tomatoes, chopped
- 16 oz jar of Louisiana Sisters New Orleans Spiced Pitted Olives, drained
- 1 tbsp. oregano
- 1 cup dry red wine
- Salt and pepper to taste
Brown chicken in olive oil. Remove chicken and drain off most of the oil. Saute’ onions until transparent then add garlic and saute’ for 2 minutes more. Add tomatoes and olives, saute’ until tomatoes are soft. Add the oregano, wine and chicken, simmer
